So, when I have a new baby my worst meal is breakfast. I wake up and I'm exhausted and craving sugar for the quick energy. I end up eating something easy, like sugary cereal and then I'm craving sugar and carbs all day because I got a bad start. Lovely brothers and sisters from church will sometimes bring dinner which is a HUGE blessing, but never breakfast. Therefor, before my last two babies were born I made around 40 breakfast burritos and put them in the freezer so that I would have something easy, yummy, and healthier. All I had to do was stick a couple into the toaster oven straight from the freezer for 20ish minutes and voila, mom starts the day off better. I haven't had a baby myself in 3.5 years but I have continued prepping the breakfast burritos to give to other moms with new babies. I try to include a bag of about 6 whenever I take a family a dinner after having a baby. And sometimes (if I have extra in the freezer) I will drop off a bag for a mama that is strung out from caring for a sickly toddler or late in pregnancy and tired. There really are several good reasons to have an easy breakfast ready to go. I've had lots of people ask for the recipe and I've yet to write it out, but the last time I made some I took pictures and paid closer attention to the ingredients so that I could do a blog post to share with folks interested. So, here it is!
