Our big news this week is that we are putting the house up for sale. The open house is this Sunday. We will be looking for a rental outside of town (further away from the base where rentals are cheaper). We will be down grading big time. Prayers for the kids' understanding and our compassion for how hard this transition is for them is appreciated. Well, here are some pictures!

A couple weeks ago Robert got two deer on a Tuesday and then one more the following Sunday! Such a blessing! If he gets a couple more then we will be set for ground meat for the whole year! We decided to process the meat ourselves to save money (if you pay to get it processed it's almost no savings). On the third deer Robert declared he wanted to make deer sausage out of the whole thing! So I bought a TON of seasoning and premixed it up and processed nine onions in my Cuisenart the day before so we could work through fast! We ended up running out of eggs after 36 pounds so we did the remaining 20 pounds just regular ground meat. But it made for quite a night! Everyone has fussed over the recipe I used for the venison sausage so I thought I would share it. I found the basic recipe a year and half ago on line and tweaked to where we like it. It is not overly spicy because we do not like extra spicy stuff. So if you like spicy, you would add more of the cayenne pepper. Homemade Breakfast Sausage
3 pounds of ground meat (we prefer venison!) 1 chopped onion 2 eggs 1 Tbs basil 2 tsp salt 1 tsp cayenne pepper 1 tsp cumin 1 tsp ground pepper 1 tsp oregano ½ tsp cinnamon ½ tsp nutmeg ½ tsp ginger In a large bowl mix everything together well. Cook how you would like to. We prefer shaping into patties and pan-frying. If you use venison you need to use oil to keep the sausage from sticking. |
